Cuvée 5 - 2006 Wine of Controlled Origin Alsace (AOC) - White wine (13 % vol)
This vintage V is stemming from a blending of 5 typical alsacian grapes varieties with 25 % Pinot Blanc, 25 % Pinot Gris, 10 % Muscat, 25 % Riesling and 15 % Gewurztraminer). Each variety bringing his character in the wine
The vine :
Soil type : Coming mainly from Marl - calcareous soils. Heavy, deep soils giving rich wines. Harvesting : 70 % of the grapes are harvested at maturity (about 12.5 % vol) and 30 % with over ripeness (about 14.5 % vol), in order to get intense flavours and good concentration.
The wine :
Goals: Obtain a rich wine, intense and full flavoured, whilst maintaining finesse complexity, and acidic structure. Method used : Hand picking and whole bunch pressing during 5 hours.
Fermentation is temperature controlled if necessary at 20 - 21°C to preserve aromatic finesse.
Drinking, cellaring potential and food-wine matches : - The blend brings together the delicate nuances of each variety, balancing floral aromatics with spicy elegance. The mouth is aromatic, dense and long but keep a nice freshness. A few residual sugars (10g) bring it a small roundness. - Good to drink now and can be aged for 5 years minimum. - Can be drunk alone or with terrines, fish and white meats.
