Exposure : East or west.
Vine management :
15 year old vines. In these soils, the root system buries deep down in the subsoil to obtain nutrients. These vines produce rich and aromatic grapes. However in abundant years, when the crop is deemed too large a green harvest is carried out in July. Harvesting :
Grapes are harvested just as they over ripen at about 13.5, 14.5 % vol with a begining of Botrytis.

The wine :
Goals : Obtain a rich wine, intense and full flavoured, whilst maintaining finesse and complexity. Method used : Skin maceration. Long and gentle 6 hours pressing. Fermentation is stopped at 13.5 % vol. in order to keep some residual sugar. Maturing on fine lees until April.
Drinking, cellaring potential and food-wine matches : - Intense aroma of spice, yellow fruit and roses. Dense mouth feel, concentrated but not heavy. Some residual sugar gives the wine a nice roundness. - Good to drink now and can be aged over 10 years. - Drinks well by itself or as an aperitif, with spicy food, strong cheeses (Bleu, Munster) or as a dessert wine.
