Riesling de Wolxheim 2007 Wine of Controlled Origin Alsace (AOC) - White wine. 12.5 % vol. - sugar : 5g/lThe vine : Soil type : Marl - calcareous, heavy, deep soil but rich in small calcareous stones, which enables the soil to harbour and maintain warmth. The grapes used in this “cuvee” come from youngest vines planted in the Grand Cru zone appellation or from a plot of land situated on the edge of Grand Cru. Exposure : South or West. « Wolxheim’s terroir » is perfectly adapted to Riesling, the king of the grape varieties in Alsace. Wolxheim’s vineyard has always been very coveted. As far back as VIII century, abbeys from the region have possessed vines in Wolxheim. In the 19th Century, a historian wrote that “before 1790, Riesling was planted in Alsace in only a few privileged areas like the Altenberg in Wolxheim.” Vine management : 15 year old vines. The vines naturally find their balance in these exceptional soils. The wine grower must be very severe at pruning and suppress all use of fertilizers. Harvesting : Riesling ripens late. So it is necessary to wait until the middle of October for the grapes to obtain all their aromatic potential for racy and complex wines.
The wine :Method used : A long and gentle 5 hours pressing. Fermentation is temperature controlled at 20°C to obtain a long fermentation. The wine is left to mature on fine lees until April. Drinking, cellaring potential and food-wine matches : - This wine has an aroma of flowers and citrus fruit with a nice mineral note. The mouth feel is dry, elegant and nice aromatic. A subtle mineral note and the ripe acidity adds length and complexity. - Good to drink now and can be aged for 5 - 10 years - Goes well with fish, white meats...
