Riesling L'Evidence - 2006

AOC Alsace - White wine - 12.5 % vol
A new vintage from vines acquired in 2006, sited on a slope with just the right exposure to the sun.

The vine :

  • Soil type : Silt-limestone soils, shallow, but rich in limestone gravel, making it easier for the soil to heat up.

  • Exposure : South-East facing.

  • Vine management : These 15 year old vines manage to extract all they need for their growth from this relatively poor soil. This soil forces the vine to put out limited foliage and to produce small grape clusters. The wine grower’s role is to be very careful in avoiding any over-harvesting so not to expose the vine to water stress.

  • Harvesting : Riesling is a late ripener. Great patience is therefore necessary. Sometimes it will be mid-October before the grapes contain all the aromatic potential that a good Riesling needs. Grapes are harvested at a potential alcohol by volume of 12.5%.

The wine :

  • Goals : Obtain a dry, elegant, fruity wine that is strongly marked by the characteristics of its grape variety.

  • Method used : Long, gentle 6 hour pressing cycle with a short period of skin maceration.
    Fermentation at a controlled temperature of 20°C in order to effect the longest possible fermentation.
    Late filtration during the month of April, with sur lie ageing.

  • Drinking, cellaring potential and food-wine matches :
    - This wine has everything one expects from a fine Riesling - expressive, boasting a combination of floral and lemony notes. Its fine acidity gives it a lovely harmonious mouth feel and a long finish.
    - Wait at least one year before drinking, will keep at least five years.
    - Will go excellently with fish and seafood, roasts, poultry and choucroute (Alsatian cabbage-based dish).
