Muscat - Vieilles Vignes 2006 AOC Alsace - White wine - 12% vol
The vine : This wine comes from the Grand Cru Altenberg de Wolxheim.
Soil type : Limestone-marl, heavy, deep soil, but with an abundance of limestone gravel, which helps the soil to heat up. Exposure : South-facing. Vine management : Old vine, 35 years old.
Given its age, the vine will explore deep down into the soil in order to extract everything it needs. This plot is now most definitely 'slowing down', and naturally produces few grapes. These grapes, however, are full of aromas.

Harvesting : The grapes are harvested when they have reached a potential alcohol by volume of 12%, the stage which generally coincides with optimal aromatic potential.
The wine :
Goals : To obtain all the aromatic exuberance and delicate fruitiness that one expects of a Muscat. Method used : Vendange entière (no stalks are removed).
Eight hour maceration in wine press.
Fermentation at a controlled temperature of 20 °c in order to effect the longest fermentation possible.
Late filtration during the month of April, on fine lees.
Drinking, cellaring potential and food-wine matches : - A fine Muscat, with intense yet delicate fruitiness, firm mouth feel, fresh and remarkably crisp. - Good for drinking immediately, it will also keep for at least 5 more years. - AIdeals as an aperitif, for receptions and social events, also with asparagus…
