Pinot Gris 2006

Wine of Controlled Origin Alsace (AOC) - White wine - 13.1 % vol. - sugar : 10g/l
The vine :
Soil type : Silty and calcareous, rich in small calcareous stones, which enables the soil to harbour and maintain warmth.
Exposure : South.
Vine management :
15 year old vines. Short pruning to limit the yield. Thinning out the leaves, full grassing to limit the vigour of the plant, yields and development of grey rot.
Harvesting : Grapes are harvested at a high level of maturity (14 % vol.)
The wine :
Goals : Produce a dense, full bodied, expressive wine, Pinot Gris, being naturally less aromatic than other Alsace varieties. Method used : Light crushing encourages the extraction of aromas during pressing (5 hours). Fermentation is temperature controlled if necessary at 20 - 21°c to preserve aromatic finesse. The fermentation is stopped with the help of cold temperature control after it has reached 13 % vol. Left to mature on fine lees until April. Drinking, cellaring potential and food-wine matches : - With a pure and elegant style, this wine has an aroma of ripe fruits, acacia flowers, undergrowth… a full mouth feel but the finish is fresh and light. - Good to drink now and can be aged over 8 - 10 years. - Drinks well by itself, or with fish, white meat and creamy sauces.
