Wine of Controlled Origin Alsace (AOC) - White wine - 13 % vol. - sugar : 52g/l
A vine :
Type of soil : Marl-calcareous, heavy, deep soil but rich in small calcareous stones, which enables the soil to harbour and maintain warmth. Exposure : East or west. Training of vine : 20 year old vines.
In these soils, the root system buries deep down in the subsoil to get nutrients. These vines produce rich and aromatic grapes. However some years, the abundance of crop is deemed to large and a green harvest takes place in July. Haverst :
This was carried out 3rd November. The grapes still health without botrytis had a high level of concentration in sugar (17% vol).
A wine :
Objectives : Obtain a full rounded body whilst maintaining the intensity of Gewurztraminer’s flavours. Wine making : Whole bunch pressing, long and gentle over 6 hours.
The most important thing during the vinification, is to obtain the right balance between alcohol and sugar. The fermentation is stopped using temperature control. Tasting, ageing potential and gastronomic advice : - Its gold, yellow colour makes the wine attractive to look at. An intense, inviting aroma. The mouth is well rounded and develops a lasting aroma of spice, quince and crystallised fruit, a fresh finish. - Fantastic to drink now but can be drunk for up to 10 years. - Drinks well alone or as an aperitif, or with “foie gras”.
