Cremant of Alsace - Cuvée Prestige - 100% Chardonnay

AOC Cremant of Alsace - Sparkling white wine - 12,5 % vol.

The vine :

  • Vintage produced from terroirs largely composed of marl-limestone soils.

  • Vine management : Cover plant 1 row in 2 in order to control excess vine growth and limit the development of botrytis bunch rot. Moderate thinning out of leaves around the grape clusters.

  • Harvesting : Only perfectly healthy grapes are harvested, at a potential alcohol by volume of 11%, when they still retain good acidity.

The wine :

  • Goals : Obtain a fine, delicate base wine with notes of fresh fruit, to be the forerunner to a great sparkling wine.

  • Method used : Very gentle pressing cycle using whole cluster pressing.
    Slow fermentation.
    Very long second fermentation.
    Stored on laths for at least 9 months, at the most 12-15 months, to preserve the fruit character typical of our Cremant sparkling wines.

  • Drinking, cellaring potential and food-wine matches :
    - Good mousse, lots of fine, tiny bubbles. Finesse and elegance are the watchwords of this wine, allying aromas of yellow peach and flowers with lovely freshness.
    - To be drunk within two years of purchase.
    - Goes well with aperitif foods, lighter dishes, also perfect to round off a meal.
