Cremant of Alsace - Brut

AOC Cremant of Alsace - Sparkling white wine - 12,5 % vol Blending of 45 % Pinot Blanc, 45 % Pinot Auxerrois, 10 % Riesling, 12.9 % vol. - sugar : 8g/l - acidity : 3.5 g/l H2SO4

The vine :

  • Vine management : 15 year old vines.
    Thinning out the leaves, grass is planted in between every other row of vines and light ploughing is carried out in order to limit plant vigour and the development of grey rot.

  • Harvesting : Grapes perfectly sound harvest at 11.5 % vol and still containing a nice acidity.

The wine :

  • Goals : Obtain a wine with fresh fruits notes, delicate, precursor of a great Cremant.

  • Method used : Whole bunch pressing and long fermentation.
    Long bottle fermentation at low temperature.
    Ageing on lees in bottle during minimum 9 months, maximum 12-15 months to preserve the fruit, characteristic of our Cremant.

  • Drinking, cellaring potential and food-wine matches :
    - A sparkling wine with fine bubbles and persistent foam. Nice balance in mouth, refreshing. Notes of peach, plum and flowers.
    - To drink in the 2 years after buying.
    - Really nice at the aperitif our with some meals not too rich or to close a meal, after the dessert
